Asparagus and samphire with Parmesan cheese and soft boiled eggs


Serves 6
2 x125g ASDA Extra Special Asparagus Tips, trimmed

2x 90g packs ASDA Extra Special Samphire

6 eggs

Freshly ground black pepper

Shavings of ASDA Extra Special Parmesan Cheese
To serve

Honey and sunflower pave loaf



  1. Break off the woody ends from the asparagus and discard.

  2. Place the eggs in a saucepan of water and bring to the boil. Once boiling, simmer for 3 minutes.

  3. Using a slotted spoon remove the eggs from the pan and place in a bowl of cold water. Carefully peel the shell from the eggs.

  4. Bring the pan of water back to the boil and add the asparagus and cook for 1 minute then add the samphire and cook for a further minute.

  5. Drain the asparagus and samphire and season with a little black pepper (the samphire is quite salty so you won’t need any further salt).

  6. Divide the asparagus and samphire between the plates and scatter over some of the Parmesan

  7. Place an egg on top of the asparagus, and gently cut open. Scatter over a few more pieces of Parmesan. Serve immediately with slices of the pave bread.


If you can get hold of duck eggs these are a real treat at this time of year, they may need a minute longer cooking than regular chickens’ eggs.
