The Methow Valley Inn and Jon Brown, Chef of the Arrowleaf Bistro in Winthrop are collaborating on a series of cooking classes, entitled “Cooking in the Valley”, as part of the Seed to Table Program at the Methow Valley Inn. We will be using local, organic products wherever possible.
The goal of the classes is to allow the participant to learn about the value of locally gown, organic food and how to use them “efficiently” to help offset the increased cost required to produce these food products. In addition, you will learn the ‘secrets of the cooking trade’; participate in a meal to follow each class with the option to invite a guest to join you. The price for each class includes the cost of the food, a meal to follow each class (option to invite a guest), ‘leftovers’ from the class to take home, recipes and a wonderful time!

1) Class One: April 20, 2010: Egg Cetera:

Learn to cook with eggs for both sweet and savory applications. Eggs are a wonderfully versatile ingredient and a great way to eat local without breaking the bank!

You will learn how to make a:




Cost: $65 per person plus $8.00 for an additional guest for the meal
Time: 10:00 am- 1:00 pm (meal served at noon)

2) Class Two: April 27. 2010: Organic Chicken: Using the whole bird

How to get the most out of expensive local and organic birds and create a multitude of options from one bird.

You will learn how to:



  • fabricate a chicken like a pro

  • make chicken stock

  • truss a chicken

  • roast a chicken

  • pan sear chicken

  • properly poach chicken

  • prepare a meal using a combinations of chicken preparations you have learned



Cost: $80.00 per person plus $10.00 for additional guest after the meal
Time: 10:00 am-1:00 pm (Meal served at noon)

3) Class Three: May 8, 2010: Market Tour: Cruise the market, buy what's fresh, and cook great food



You will learn: how to use basic techniques to prepare a quick, satisfying meal with what's available

Cost: $75.00 per person plus $10.00 for an additional guest for the meal
Time: 8:00 am-10am for Market Tour, Class and Meal to follow

4) Class Four: May 31, 2010 Here's the Beef: Save money by cutting your own steaks, roast a perfect prime rib, grill a perfect steak, make the sides, become a grill god(!!); Guys encouraged to sign up!



You will learn how to:

  • fabricate you own steaks

  • cook both dry aged grass fed and grain fed steaks

  • roast a prime rib

  • make the sides to accompany a classic steak house dinner and how to pair wines with the meal



Cost $150.00 per person plus $35.00 for an additional guest for the meal (must be 21 or older). Meal includes wine
Time 3:00 pm-early evening. Dinner served at 6:30 pm
